A Week of Dinner – Part 2

It’s been over a year since I’ve done one of these posts and a lot has changed since then, plus that was a winter post and what we eat in the heat of the summer is a little different. We both love to cook so that’s the norm in our home. We still eat out, but generally only on the weekend and we’re pretty picky about where we eat. During the week it’s all about homemade food. I wouldn’t say this week was a particularly healthy week of eating, but it was all delicious. Here’s a snap shot at a week of dinner in our home.

Monday: Pan fried Mahi Mahi with lemon basil butter sauce, brown jasmine rice, and zucchini & squash. This was quick and easy – you can find the Mahi Mahi recipe here. We have fresh basil (and other herbs) in our garden right now and I love incorporating it into our dinners.


Tuesday: Homemade baked chicken wings, steamed corn on the cob, and steamed broccoli. My husband makes awesome homemade wings. They’re spicy, crispy, and full of flavor. Like many of the things we cook at night, there is no recipe. It’s a little different every time, but always delicious.


Wednesday: Penne pasta with jar sauce, peas, garlic and herbs. Our tomatoes are beginning to peak and then we will begin making our own sauce. For now we buy a basic jar sauce from Trader Joe’s and add fresh sage, basil, and rosemary from our garden. Pasta is a once a week staple in our home. I’m Italian and I love it, but there are so many different ways to make it. It’s a great opportunity to incorporate veggies (we often throw in squash and/or zucchini) and sometimes we brown up some lean ground turkey. This week it was just basic pasta, but it was still delicious.


Thursday: Lean turkey burritos. Tacos/burritos are also a weekly staple in our house. This is also because of the variety that can be thrown in. Many weeks we do simple black bean and corn burritos with some other veggies. This week we had browned lean ground turkey, corn, black beans, peppers, brown rice, shredded cheese, avocado, and a little sour cream.


Friday: This particular week we actually went out to dinner for a friend’s going away party. Normally we stay in on Friday since I have to get up so early on Saturday, but we switched it up this week and stayed in on Saturday. (In case you’re curious, I had a grilled veggie pita and fried plantains for dinner that night).

Saturday: This is what we call “appetizer night.” It’s something we do once in a while when we’re hanging out at home watching a movie, playing video games, or in this case finishing a binge of Stranger Things (check it out if you haven’t!). This night my husband made homemade buffalo chicken pizza, nachos, some veggies and ranch, and some chips and salsa.
